The truth is that there is nothing “essential” about whole grains. In fact, they are among the unhealthiest foods you can consume.

Whole Grains Spike Your Blood Sugar
You probably know that high glycemic foods cause a rapid rise in blood sugar and insulin.

For those with celiac disease and gluten sensitivity (two completely different conditions), even a small amount of gluten can cause serious digestive problems… systemic inflammation… autoimmune disease… and the list goes on.
At least 300 health-related issues have been linked to gluten.
But here’s the thing…

But the Problem is NOT Just Gluten!
Most doctors (mistakenly) believe that any problems with wheat are problems with gluten. In other words, if you don’t have a problem with gluten… you don’t have a problem.
However, the protein we call “gluten” actually consists of hundreds of smaller compounds. Any ONE of these could trigger an inflammatory or immune response.
And that’s not even a fraction of the whole story, because…
According to a study published in Plant Physiology, modern wheat is capable of producing at least 23,788 unique proteins!
This would explain the studies where people have shown a severe reaction to wheat – and no reaction at all to gluten itself, even in high doses.
The problem is that conventional lab testing looks for just two antibodies related to gluten.
If you test negative for these two, most doctors will give you a clean bill of health – and probably tell you that any symptoms you’re experiencing are “all in your head.”

Unlike animals, plants cannot escape being eaten. That’s why many plants have defenses to discourage predation. Thorns on a cactus are an obvious example.

One of these is wheat germ agglutinin (WGA).

Many of the things we love most about bread are because of gluten.

Baking is a science. And baking with gluten-free, low-glycemic ingredients is an EXACT science.
You can’t simply substitute grain-free flour for regular flour and expect it to “magically” achieve the characteristics you love about bread. Replacing wheat flour in a bread recipe is a LOT harder than replacing sugar in a dessert.

It took a LOT more work than that.
To create each recipe, I tested numerous variations – each time, swapping ingredients, changing the amounts and ratios, trying different preparation methods, cooking times and temperature. You wouldn’t believe the difference one small variation can make.
Every formula was carefully examined in terms of taste, texture, rise, crumb, ease of preparation – and most important – how close it was to the classic original.
In some cases, it took more than a dozen formulations of a single recipe until I was satisfied with the outcome. There were some weeks when I would work on just ONE recipe.
Sometimes I just wanted to collapse in a heap and cry.
Okay, I really did that once – just ask my husband.

YES! All of the recipes in Better Breads are grain-free and have dairy free options.
How long do the breads take to bake, start to finish?
Bake time varies for each bread. But unlike most breads, the hand on time for Better Breads is only around 10-15 minutes. We do have several yeast-based breads which require rising, but the majority are quick breads that you simply stir, shape and bake!
What is the carb count of the breads in Better Breads?
We have two measures of carb counts in Better Breads: Low Carb and Moderate Carb. Our low carb breads contain less than 10 grams of carbs per serving, with the majority containing 5 grams or less. Our Moderate Carb breads contain 15 grams of carbs.
Is Better Breads suitable for those following Wheat Belly diet?
YES! All of the recipes in Better Breads are free of wheat, gluten and grains, and most are very low in carbohydrates.
Is Better Breads suitable for those on a starch-free diet?
YES! 20 of the recipes in BetterBreads are starch-free and suitable for a starch-free diet.
Is Better Breads suitable for those on a ketogenic diet?
YES! Most of the recipes in Better Breads contain 5 grams of carbohydrate per serving, with net carbs of 2 grams per serving.
What ingredients will I need to make the breads in Better Breads?
The key ingredients you’ll need to make the recipes in Better Breads are those you can easily find at your local health food store and include:
- Coconut flour
- Blanched almond flour (or sunflower seed flour for nut-free breads)
- Psyllium husk powder
- Arrowroot flour, tapioca flour (for the Moderate Carb breads)
- Creamed coconut
- Almond butter or sunflower seed butter
- Green banana flour (for the Moderate Carb breads)
- White chia seed
- Golden flaxseed
- Apple cider vinegar
- Lemon juice
- Healthy fats including pastured butter (if dairy tolerant), coconut oil, avocado oil, palm shortening
- Small amounts of palm sugar or honey or maple syrup or yacon syrup or molasses (for the Moderate Carb breads)
- Eggs, baking soda, cream of tartar, sea salt, vanilla, spices and herbs
Are the recipes in Better Breads yeast free?
Most of the breads in Better Breads are yeast free. Five recipes do contain yeast.
Are the recipes in Better Breads suitable for an egg-free or vegan diet?
We have had great success creating 4 egg-free and vegan breads including No Rolls Dinner Rolls, Paleo French Bread, Crusty Boule, Paleo Vegan Breakfast Bread and Superfood Seed & Nut Loaf. However, breads using coconut flour or coconut products typically require eggs to properly rise.
Do your recipes use guar gum or xanthan gum?
No. We do not use gums as many people experience negative digestive effects from these foods.
What tools will I need to make the breads in Better Breads?
Making the recipes in Better Breads is easy. You don’t need a fancy bread machine, or even a food processor. You will need a hand mixer, mixing bowls and spoons, baking sheets, loaf pans, measuring cups, a pizza stone or cast iron pan and a kitchen scale.
Is Better Breads suitable for those with tree nut allergies?
YES! You can use sunflower seed flour interchangeably with almond flour in all of our recipes.
